1 - 1 1/2 lbs fresh baby potatoes
1/4 cup That's Good Garlic
1 tablespoon dried dill or rosemary
1/4 cup chopped fresh flat-leaf parsley
Salt & Pepper to taste
Poke potatoes with fork. Mix all other ingredients in large bowl. Add potatoes and toss well. Transfer to oven safe roasting pan and bake uncovered for 30 - 40 minutes at 350 degrees, turning potatoes occasionally.
To speed things up, poke potatoes with fork and toss with other ingredients. Transfer to a microwave safe dish and microwave on low for 5 - 8 minutes, until nearly fork-tender. Transfer to oven safe roasting pan for 15 - 20 minutes at 375 degrees
